Produced from some of the old plots of pinot noir, the Chant de l'Archer is vinified in oak barrels. However, Simon Chotard makes a delicate use of oak and it just helps to reinforce the structure of the wine through the micro oxygenation and lighten the tannins. As a result the mouth fell is round and mild with notes of blackcurrant and raspberry. It is also supported by spices like peeper and cinnamon. This elegant wine has certainly a Bourgogne touch!
